Beef rolls with apricots and spring onions

Ingredients
Main course For 4 people
20 g of dried porcini mushrooms
2 spring onions
80 g of dried apricots
8 quick-cooked beef escalopes approx. 80 g
4 tablespoons of harissa
salt
pepper
2 tablespoons of HOLL rapeseed oil
4 dl of roast sauce

How to proceed
Preparation: approx. 45 minutes
Soak the mushrooms in warm water for approx. 20 minutes. Drain them and let them drain well. Cut the spring onions into three horizontally and into four parts vertically. Cut the apricots into strips. Place the beef slices between two sheets of cling film and beat them a little with a meat mallet. Place them on the work surface. Spread them with harissa. Fill them with the spring onions and apricots. Roll up the slices and secure them with toothpicks. Season with salt and pepper. Brown the rolls in oil for a few minutes. Add the mushrooms and brown them briefly. Add the roast sauce and simmer covered over low heat for approx. 5 minutes. Serve with wild rice.
